CORRALES– This fall, Jane Butel is featuring day classes each month and a weekend class November 10-12 on traditional New Mexican and Southwestern favorites. All of her classes are full participation and are taught in her professional kitchen in Corrales.
In September, the class on the 21st features Green Chile favorites such as 2 award winning Green Chile Stews, Blue Corn Crusted Chile Rellenos, Green Chile Crusted Chorizo Quiche and Green Chile Apple Pie. The October 12 class features a realm of tamale treasures with all the techniques for creating perfect tamales and the December 7 class features New Mexico Holiday Favorites including Perfect Guacamole, Red Chile Beef Tamales, Posole, Bizcochitos and Margaritas.
Starting in 1983 in a leased Bed and Breakfast Inn in Santa Fe, New Mexico, Jane Butel conducted her first week long full participation cooking class. Now, 34 successful years later, Butel is still teaching these highly rated classes.
Through the years, she has garnered high praise from many publications including feature stories in “Bon Appetit” magazine, the “New York Times”, “Good Housekeeping”, “Redbook”, “Travel and Leisure” and many more. “Bon Appetit” rated her school as the “Best in the US” in 1996. Her Mexican Regional Schools conducted at the beautiful Fairmont Princess Hotel in Scottsdale were recognized as the “Best Hotel Based Cooking School in America” and one of the ten best in the world. She developed the series for presentation at the Hacienda restaurant at the Scottsdale Fairmont Princess hotel where it received such rave reviews as “This was the best experience”, by Julie Hall and “you will never know how much I enjoyed the cooking school last weekend, you are a great teacher”, Betty Gentile.
Each class is full hands-on participation and is preceded by a review of the history of the major ingredients as well as hints and tips for success with the recipes as well as “important to know” culinary techniques such as knife selection and use, sauce making, tips for baking, meat cookery and more.
Jane Butel just published her newest cookbook, “Simply Southwestern” with Turner Publishing and is now working on editing and republishing 8 of her best selling cookbooks with them. The dates for the weekend classes are—May 13-15, July 15-17 September 16-18, October 14-16 and November 11-13, 2016.
Hands-on Team Building, Dinner Party, Special Event and demonstration classes are also featured and are very popular with corporate, club, private and convention groups.
