On Saturday, July 1st, InterContinental Hong Kong, with its dramatic Kowloon waterfront location, will provide a spectacular setting for the Fireworks Display marking the 20th Anniversary of the Hong Kong Special Administrative Region. The hotel’s celebrated restaurants are presenting special set menus, showcasing exceptional cuisine, with stunning panoramic views of Victoria Harbour and the Hong Kong skyline as the dramatic backdrop for the 8:00pm Fireworks Display.

Harbourside’ s elaborate Dinner Buffet features hand-made sushi and freshly sliced sashimi, an abundant selection of chilled seafood including lobster, yabbies, crab, clams, mussels and prawns. There is also an enticing selection of selection of authentic South East Asian and international dishes by Chef Thenesh Murugaya and his team.
Highlights on the buffet will include Smoked Iberico Pork Cheek, Hokkaido Baked Crab, Steamed Cod with spring onion and ginger, Braised Sea Cucumber, Abalone, Goose web, Fish Maw with bean curd, Singaporean Chili Lobster and Malaysian Style Pepper Crab.
Watch our chefs in action preparing à la minute items including Pan-fried Rougie Foie Gras, Asian style Grilled Satays, Lobster, Marinated Hokkaido Pork, Australian Wagyu Beef and Organic Chicken. There will also be a carving station with Slow Roasted USDA Prime Bone-in Rib Eye and Chinese style Duck. The elaborate dessert buffet offers a rotating selection with over 45 different international selections, including South East Asian Desserts. There is also a chocolate fountain and hot soufflés made à la minute and an ice cream station with Emack & Bolio’s Cones.

Executive Chef Stephane Gortina is preparing a 5-course authentically French seafood menu that includes: Shrimp cocktail, our way; Cookpot of quinoa, seasonal vegetables with black truffle; Line caught turbot, Grenobloise-olive-tomato; Our famous Camembert; and for dessert, Chocolate from our Manufacture in Paris, crunchy almond.

Indulge in the elaborate Salad Bar which will include French Duck Foie Gras Terrine, Parma Ham, Smoked Scottish Salmon and Salami. Next is Alaskan King Crab Legs (12 oz) for two to share. Then a choice of main course from the charcoal grill: U.S. Tenderloin 6oz, U.S. Striploin 10oz., U.S. Rib Eye 12oz or Chilean Sea Bass 10oz – all served with Black Truffle Potato Gratin and Summer Baby Vegetables. This is followed by a Dessert Buffet.

Executive Chef Sean Mell and Executive Sushi Chef Kazunari Araki have created an 8-course Omakase Dinner Menu that features: Uni & King Crab Monaka with Tamago Sauce and Botan Ebi Sashimi with Umeshu Jelly and Tomato Gazpacho. This is followed by Toro Sashimi with Mango & Fig Dressing and Kisu Sashimi Cucumber Amazu with Kawahagi Kim and Wasabi Salsa. Next is a Deluxe Sushi Assortment, followed by Yabby Tempura with Spicy Garlic Aioli. The next course is Dover Sole Fillet with Ginger-Lime Ponzu, followed by A5 Japanese Wagyu with Onion Balsamic Teriyaki and Lobster & Truffle Soup Noodles. For dessert, “Sparkle Blessing” made with Ricotta, White Cocoa, Cherry and Wasabi.

Executive Chef Lau Yiu Fai is preparing an 8-course Cantonese feast to mark the 20th Anniversary of the HKSAR. The meal begins with Braised Lobster with Crispy Taro Net. Next is Double Boiled Fish Maw and Matsutake, followed by Braised Whole Fresh Abalone in Oyster Jus. The feast continues with Steamed Duck Liver and Steamed Garoupa Roll with Yuzu Dressing, followed by Wok-fried Diced Wagyu Beef with Cumin, Scallion and Spring Onion. Next is Wok-fried White Asparagus with Bamboo Piths and Termite Mushrooms and Fried Rice Wrapped with Whole Conpoy and Steamed in a Lotus Leaf. For dessert, Sweetened Walnut with Glutinous Rice Dumplings and Bird’s Nest.
