HOTEL EL GANZO KICKS OFF CHEF IN RESIDENCE PROGRAM
WITH TALENT FROM ONE OF MEXICO CITY’S HOTTEST RESTAURANTS TAKING OVER
San Jose del Cabo, Mexico – Two chefs from Mexico City’sLardo restaurant, an open-kitchen concept in the neighborhood of Condesa that has captivated critics and diners alike, will take over the kitchen at Hotel El Ganzo on September 30 and October 1 during the hotel’s newest offering: a Chef in Residence program that will bring in an ever-changing line-up of culinary talent from around the globe.
Lardo’s Chef Federico Sali, an Italian chef trained in Tuscany and the man behind the acclaimed Tinello in West London, and Chef Ivan Icra, a classically-trained pastry Chef who has left his mark in Barcelona, Menorca and London, will take the helm of the El Ganzo kitchen during their upcoming residency. The duo willcreate a special dinner menu each night to introduce hotel guests and locals to new, innovative flavors. The concept of Lardo, which is heavily focused on the quality of its ingredients, fits perfectly with El Ganzo’s sustainable approach; the hotel’s kitchen is stocked with fresh ingredients from local vendors and produce is sourced from El Ganzo’s lot in Huerta Los Tamarindos, an organic farm located in San Jose del Cabo.
